How to cook a Mero a la Mallorquina..

Add the squeezed lemon juice to a bowl of water and leave to infuse. Next peel the artichokes, remove the stems and slice off most of the leaves before cutting what you have left horizontally into 4 equal portions. Remove the ‘choke’ using a sharp knife or other suitable implement before dicing the remaining vegetable and placing in the pre-prepared lemon water.
Next, make sure your fish is suitably seasoned with salt and pepper, and then place inside the fish, the rest of the lemon (sliced) along with the washed fennel leaves.
Add the potatoes to a pre-heated (high) skillet covered with your olive oil and turning at regular intervals, fry them until just brown but not fully cooked. Next, arrange the potatoes to cover the bottom of a baking tray (which will also take your fish, stock and vegetable ensemble), place the fish on top and then cover with the wine and ground pimenton or paprika.
Finally, remove the soaked artichokes and dry thoroughly then mix with the remainder of the ingredients in a bowl (i.e. add the scallion, carrots, leeks, swiss chard tomatoes and spinach).
After you have placed your vegetables over the fish, then finish your dish by covering with a sprinkling of your fruits and nuts, chopped parsley and fennel and pour over the fish stock.
Make sure you place your dish in the centre of a pre-heated oven at around 400 – 425ºF and bake for around two hours or until your fish appears translucent / and or the vegetables are cooked. This dish is best served as soon as you remove from the oven and will easily feed a family of six .
